Herb and Spice Beer

Philadelphia Fleur de Lehigh

Substyle - Belgian-Style Blonde Ale
Brewed By:
Philadelphia
Self-Defined Style:
Spiced Golden Ale
Strength (ABV):
4.2% ABV

It was our first Select Ale and now Fleur de Lehigh is part of our regular line up for the summer months. This unfiltered golden ale is brewed with chamomile, rhubarb, ginger, rose hips, and lemon grass; then fermented with our Belgian yeast strain to provide a uniquely full flavored yet highly drinkable spring/summer brew.

Best With:
As specialty beers are typically all made with flavor enhancing ingredients, foods with complimentary ingredients are generally an ideal match. For example, pumpkin beers pair well with spiced pumpkin pie, and chocolate beers tend to work well with chocolate based desserts.

Rogue John John Hazelnut Brown

Brewed By:
Rogue
Self-Defined Style:
Brown Ale
Strength (ABV):
5.0% ABV

Rogue’s Hazelnut Brown Nectar matured in Rogue’s Hazelnut Spiced Rum barrels.

In a collaboration of crafts, Rogue Brewmaster John Maier and Rogue Spirits Master Distiller John Couchot have joined forces to create a distinct, innovative series of brews called John John Ales. The series will take Rogue Ales legends and age them in Rogue Spirits barrels. A 3,100 gallon batch of John John Ale produces 1357 cases of beer.

Best With:
Brown ales typically have a mild hop presence and a subtly sweet, complex malt character that meshes beautifully with honey and tomato based barbecue sauce on all manner of grilled meats. Brown ale also shines with French onion soup, and could even work with a mild cigar.

Géants Noël des Géants

Product - Géants Noël des Géants
Brewed By:
Géants
Self-Defined Style:
Gruit / Spiced Beer, Winter / Holiday Beer
Strength (ABV):
8.5% ABV

The Brasserie des Géants, or Giant Brewery, is housed in a medieval castle in the town of Irchonwelz, in the French-speaking south of Belgium. The Géants Christmas beer came out in 2007, and it’s their best one yet. Rich and warming, and just a bit spicy (thanks to the delicate addition of a special aromatic herb from the region of the brewery), this festive ale has everything you want in a Belgian beer – but not the cheap sugary flavor that the more commercial breweries use to reel in a less sophisticated crowd.

Best With:
As specialty beers are typically all made with flavor enhancing ingredients, foods with complimentary ingredients are generally an ideal match. For example, pumpkin beers pair well with spiced pumpkin pie, and chocolate beers tend to work well with chocolate based desserts.

Our version of a winter warmer: brewed with cinnamon, orange zest, clove and generous amounts of honey. Pours a deep amber to ruby color with an off-white head. Aromas are fruity and spicy, with a slight floral undertone from the lager yeast. The flavor is smooth, full and spicy, balanced by the bite of Mt. Struise Tsjeeses

Product - Struise Tsjeeses
Brewed By:
Struise
Self-Defined Style:
Blonde Winter Ale
Strength (ABV):
10.0% ABV

Deep to orange blond abbey triple winterbeer which has been lagered for 8 months on different stonefruits. Tsjeeses was born out of a 5 year brew experience regarding x-mas beer without being capable of finding a suitable name up to now. With the name came a face, a caricature actually, that was drawn on the day Urbain, our brew master and master brewer, drank too many Tsjeeses's. Every time he drinks one, he says "Tsjeeses, what a beer". Therefore the name is more an expression of stupefaction than a curse. We have had already many discussions around the pronounciation of "Tsjeeses".

Best With:
Generally speaking, Belgian ale is a gastronomic miracle. The delicate spicy and fruity nature of these ales, accentuated by the distinctive Belgian yeast strains, pairs beautifully with lamb, mussels, and semi-soft cheeses such as gouda, havarti, and tilsit.

Honey Basil Ale

6.0% ABV
Bitterness (IBU):

This Bison classic is infused with organic honey for its aroma and a hint of sweetness and fresh organic basil to lend a slight herbal note and basil aftertaste—a perfectly refreshing brew. A Portland, OR restaurateur shared this with me: pair this beer with pasta and marinara sauce, maybe some sautéed shrimp and the basil in the beer leaps forward on your palate. Wow!

Best With:
As specialty beers are typically all made with flavor enhancing ingredients, foods with complimentary ingredients are generally an ideal match. For example, pumpkin beers pair well with spiced pumpkin pie, and chocolate beers tend to work well with chocolate based desserts.

Dieu du Ciel
Self-Defined Style:
Peppercorn rye beer
Strength (ABV):
5.0% ABV

Routes des épices (French for "Spice Route") is a rye beer brewed with both black and green peppercorns. Initially, the beer reveals flavours of fresh grain and malt, which give it notes of chocolate, caramel, and fruit. The pepper flavour and aroma is fully revealed in the finish, which leaves a pleasant, spicy, tingling sensation on the tongue.

This beer won a gold medal (second place amongst 10 gold medal winners) at the adjudicated "MBeer" contest during the Mondial de la Bière in Montréal in 2006.

The Route des épices was born in our Montreal brewpub in May 2002

Best With:
The assertive rye character in this beer enables it to pair quite well with rye-friendly foods such as pastrami (particularly on rye bread).

Dieu du Ciel Rosée d'hibiscus (Pinkish Hibiscus)

Product - Dieu du Ciel Rosée d'hibiscus (Pinkish Hibiscus)
Brewed By:
Dieu du Ciel
Self-Defined Style:
Hibiscus flower Wit
Strength (ABV):
5.0% ABV

Rosée d’Hibiscus is a soft spoken wheat beer. The rose colour comes from the hibiscus flowers added during the brewing process. The aromas and flavour of this tropical flower are very prominent in the beer, giving it a slight acidity and a very agreeable fragrance. It is the perfect thirst quencher on a hot summer day.

This beer won a gold medal (fifth place amongst 10 gold medal winners) at the adjudicated "MBeer" contest during the Mondial de la Bière in Montréal in 2007, and a silver medal in the 2008 Popular Beer Contest during the Mondial de la Bière in Montréal.

Best With:
The refreshing citrus and spice character and delicate mouth feel of wheat beer makes it a great accompaniment to boiled veal weisswurst, lighter fish such as mahi-mahi, and salads made with citrus based dressing.

Product - Dieu du Ciel Fumisterie (Smoke screen)

Product - Dieu du Ciel Fumisterie (Smoke screen)
Brewed By:
Dieu du Ciel
Self-Defined Style:
Hemp beer
Strength (ABV):
5.5% ABV

Fumisterie is a beer that sits at the intersection of an english and german ale. It is full-bodied, malty and has a slight caramel flavour. The organic hemp seeds incorporated during the brewing process give it a unique and original taste. The hop flavour comes through delicately in the after taste.

Fumisterie, which loosely translates as “smoke screen”, was given its name in reaction to laws – created under false pretext – that prohibit hemp crops, a beneficial plant with multiple ecological uses.

The Fumisterie was born in our Montreal brewpub in March 1999

Best With:
As specialty beers are typically all made with flavor enhancing ingredients, foods with complimentary ingredients are generally an ideal match. For example, pumpkin beers pair well with spiced pumpkin pie, and chocolate beers tend to work well with chocolate based desserts.
